Made with Vietnamese longans, fresh young coconut, and ceremonial oolong matcha, this tropical matcha sparkler captures some of Vietnam's most beloved flavors in a single glass.

Ingredients
Serves 1
- 3 g Misty Lava Ceremonial Oolong Matcha
- 60 ml (2 oz) hot water (160–175°F / 70–80°C)
- 8–10 fresh Vietnamese longans, peeled and pitted
- 60 ml (2 oz) fresh coconut water
- A few pieces of tender young coconut flesh
- 60 ml (2 oz) plain sparkling water
- 15 ml (1 tbsp) agave syrup
- Ice
- 1 sprig fresh mint
Note: No fresh longans? Canned longans work well too. Drain before using. We recommend sweetening with agave rather than the canning syrup for a cleaner flavor that lets the matcha shine.
Instructions
Step 1: Muddle the Longans
Add the peeled longans and agave syrup to a tall glass.
Using a muddler or the back of a spoon, gently crush the fruit to release its juices while leaving some larger pieces intact.

Step 2: Build the Drink
Add the coconut flesh to the glass.
Fill the glass with ice, then pour in the sparkling water and coconut water. Stir gently to combine.

Step 3: Prepare the Matcha
Sift 3 g of matcha into a bowl.
Add 60 ml hot water and whisk until smooth and frothy.
Step 4: Float the Matcha
Slowly pour the whisked matcha over the back of a spoon onto the drink to create a vibrant green layer.

Step 5: Garnish and Enjoy
Add a sprig of fresh mint.
